Chillo al Ajillo (Pan Fried Red Snapper in Garlic Sauce)
This simplified version of a classic Puerto Rican Lenten dish takes a restaurant staple and makes it easy for the home cook. Red snapper fillets are rubbed with citrus-garlic marinade, then pan-fried until the outside is crispy, and the inside is flaky and tender. A zesty garlic-vinegar sauce is the finishing touch!
